If you want to get your braai on but don’t have time to wait for braai wood to burn down to ash – then using charcoal is the way to go.
Charcoal is essentially wood burned in a low-oxygen environment, at high temperatures. Good quality lump charcoal will also the charred flavour to your braai meat.
Braai tips when using charcoal:
- Use half a lemon or onion to clean your grid before placing the meat on it.
- Get your timing right: It takes approximately 30 minutes after lighting for your coal to be ready for cooking. You’ll know the coals are ready when they are glowing red inside and have turned ashy and grey on the outside.
- More is not better. Too much charcoal will be difficult to light and the fire will burn too hot. Around 20 pieces will be suitable for a family-sized braai.
- Once you’ve got the coals lit, it is time to take the meat out the fridge. Letting the meat sit at room temperature for 20-30 minutes allows the fibres in the meat to ‘relax’ a little. It also means the grill temperature won’t drop slightly when you place the meat on it, which leads to faster cooking (and juicier meat).
